Because life is short, we're going to start with the Honey Chomeur, a Quebecois version of Sticky Toffee Pudding served with a housemade Limoncello. Never too sweet with fresh dish apples.
Then we have a Flat Iron Steak, medium rare, served with mashed potatoes, winter greens and roasted root vegetables. The steak was was perfectly cooked and the dish was just right for a January evening on Vancouver Island.
To start the meal - since I'm doing this completely ass-backwards, we have a variation of the Wild Mountain classic celeriac soup, this time with diced apple, homemade bacon, miner's lettuce and basil oil. Perfect for the season.
